Vado’s hotspot Open Now

Perched along the Fond Canie main road in the hills just above Roseau, Vado’s Outpost is a lively village bar and local food spot where you can get a proper Dominican meal from early morning straight into the night. Run by Vado, it’s the kind of roadside place where people stop in for breakfast before work, swing back for lunch, and then return in the evening for a drink and a lime, with music, conversation and a steady flow of regulars giving it a real community feel.

Food is at the heart of Vado’s Outpost, with a different home-style special almost every day of the week:

• Tuesdays: Pelau day – a big pot of one-pot goodness.

• Wednesdays: “Whatever comes in my hand” – usually provisions, stew chicken, peas, salad and other hearty plates.

• Thursdays: Soup day – rotating bull foot soup, beef soup, lentil soup, red bean soup or callaloo (one type each Thursday).

• Fridays: A full “baked food / Sunday food on a Friday” spread, think ribs, baked chicken, stew pork, fish in Creole sauce and more.

• Saturdays: Lunchtime soups – beef soup, bull foot soup and a rich broth made with smoked meat, pig’s snout, turkey and fish, all in one pot.

• Sundays: Breakfast in the morning followed by a proper local lunch later in the day.

Opening hours are just as generous: on weekdays Vado opens from about 6:30 am and goes until around 10:00 pm, with Fridays and Saturdays often running later (midnight or even 1:00 am, depending on the crowd). On Sundays, breakfast starts from around 8:00 am, with service continuing into the early evening. Recently, Mondays have also been added to the schedule to support all the work happening in the valley, so you’ll often find the doors open then too once Vado finishes shopping and prep in town.
